VITICULTURE
Harvested and pressed on December 7th, 2016 at -9°C with 39% grape sugars at pressing. Grown at Summerhill Vineyard, and just down the road at the Eidse Brothers’ Vineyards in pristine Kelowna, Okanagan Valley, BC.
VINIFICATION
Grapes were pressed frozen to yield small amounts of rich, sweet juice. The wine fermented slowly and stopped naturally with a high degree of residual sweetness.
TASTING NOTE
This unique Icewine exhibits fascinating contrasts between sweet and savory notes. On the nose and palate, you may find notes of dried cranberry, cherry, strawberry and apple along with hints of white pepper, earth, leather and minerality.
SUGGESTED PAIRING
Serve chilled with rich, intense cheese such as Roquefort or Gorgonzola, salted dark chocolate, and candied nuts.
