VITICULTURE
On November 26th, 2015 Clone 21B Riesling grapes were carefully harvested from our estate vineyard while frozen on the vine at -9°C.
VINIFICATION
Grapes were pressed frozen to yield small amounts of rich, sweet juice. The wine fermented slowly and stopped naturally with a high degree of residual sweetness.
WINEMAKER’S TASTING NOTE
This elegant wine displays delicate aromas of honeysuckle, candied lime, apricot, lemon custard and lychee. Lively acidity balances the luscious sweetness on the palate, where flavours of honeyed white peach and candied ginger with hints of baking spice and white pepper dance. The finish is silky and long.
PAIRING SUGGESTION
Enjoy chilled as a dessert on its own, with a platter of fruit and light cheeses, or drizzled over vanilla ice cream.
